Dover Sole are oval in shape with small eyes that are close together. They have a round nose with a curved mouth. The nose has an opening on the underside. They are muddy brown in colour.

Dover Sole are an excellent eating fish
We recommend cooking them, like plaice on the bone under the grill. Spread a little butter on the and add a dash of lemon juice and some seasoning prior to cooking.
