Smoking Dust vs Wood Chips: Which Do You Need?: Fish Smoking Guide

The single most common mix-up in home smoking: buying chips for a cold smoker, or dust for a BBQ. They look like the same stuff at different sizes - they are actually fuels for two different machines. One rule sorts it forever: dust for cold, chips for hot.

Why chips will not work cold

A cold smoke generator relies on the fuel itself smouldering slowly along a maze - only fine wood dust packs tightly enough to creep along at that pace. Chips have too much air between the pieces: they either go out or flare, and either way your 12-hour salmon session dies at hour one.

Why dust will not work hot

Over direct heat, dust flashes to ash in minutes and can catch fire in a smoker box. Fine chips release smoke steadily in a stovetop oven; coarse chips last through a proper barbecue. Grade to kit, always.

Can I grind chips into dust?

In theory; in practice you get uneven grit that smoulders patchily. Milled dust is graded for an even creep - it is the one corner not worth cutting.

Do I need both?

Only if you run both methods. Hot-only households need chips; a ProQ owner needs dust; the ambitious need one bag of each and a free weekend.

Does flavour work the same in both?
