What does the ProQ cold smoke generator do?

It is a maze that holds a trail of wood dust or fine chips and smoulders slowly to produce cool, clean smoke. Because it adds smoke without heat, it lets you cold smoke salmon, cheese and bacon in a covered BBQ or cabinet.

How long does it smoke for?

One fill gives an average of around 10 hours of smoke, depending on the wood, airflow and conditions. That is enough for most cold-smoking jobs in a single session.

Does it come with wood?

Yes. It includes one pack of wood suitable for a single smoke, so you can try it straight away. For regular use, add more wood dust or fine chips separately.

What can I use it in?

It is designed for BBQs with lids, but works in many homemade setups too, from a cardboard box to an old filing cabinet, as long as there is room for the food and some airflow.

Light one end of the wood trail with a tealight. Once it is glowing steadily, remove the candle and let the wood smoulder its way around the maze on its own.

Can I use wood dust or chips?

It runs on wood dust or fine chips. Finer wood tends to smoulder most reliably in a maze. Coarse BBQ chips are better suited to a smoke box than to a cold smoke generator.

What foods suit cold smoking?

Salmon and other fish, cheese, bacon and similar foods are classic choices. Cold smoking adds flavour at low temperatures without cooking, so it suits foods you do not want to heat through.

Is this better than the starter kit?

If you already have wood dust and tealights, the generator on its own is all you need. If you are starting from scratch, the Cold Smoking Starter Kit adds four woods and tealights for an easier first run.

Good kit. Real people.
