With the same food, equipment and cooking method, how do tasters describe different smoking woods? Compare three food-smoking woods you already use safely—for example apple, alder and oak—without telling tasters which coded sample uses which wood. Do not assume a particular wood should win.
Food safety takes priority over experimental consistency: abandon a sample if the safe method was not followed. Consult Food Standards Agency cooking guidance and the manufacturer. Smoke colour, flavour and tasting are not safety tests.
