What is the difference between coarse and fine wood chips?
Coarse chips are larger (20/160, around 8mm) and are made for BBQ smoke boxes, flip boxes, grills and charcoal. Fine chips (7/20) and wood dust suit hot smoking ovens, stovetop smokers, smoking guns and cold-smoke mazes.
What can I use coarse chips with?
BBQ smoke boxes, flip smoke boxes, outdoor grills, and sprinkled directly onto charcoal.
Which flavour should I choose?
Oak is a classic all-rounder for red meat and game; apple and cherry give sweeter, fruity smoke for fish, poultry and pork; maple is mild and forgiving; hickory is strong and classic for ribs and BBQ. Select a flavour above to see its profile.
How much should I use?
A small handful is usually enough - the chips are ground to smoulder gently. Start modest and add more next cook if you want a stronger result.
